Redlove Apple/Red Elderberry Jelly with Rosemary
¾ L Redlove apple juice (unfiltered)
1 packet of jam sugar 2:1 (for ¾ L juice)
5-7 flower umbels of the Red Elderberry "Pink Beauty"
2 sprigs of rosemary
Let the Redlove juice seep overnight together with the elderberry flowers in a container with a lid.
Pour the juice through a very fine strainer or sieve into a saucepan and mix in the jam sugar.
Add two rosemary sprigs to the juice mixture.
The juice must boil for about 5-8 minutes (possibly test the consistency).
Fill the jelly into hot rinsed glasses and after tightening them, turn them upside down for a few minutes.
Instead of using rosemary, you can also use lavender flowers, or brew and boil the Redlove juice together with mint twigs instead of elderberry flowers.
